1 medium onion, sliced
2 leeks, well washed and sliced
1 T unsalted butter
1 quart chicken broth
1 lb potatoes, sliced
1 pint cream
salt and ground white pepper to taste
chopped chives
Recipe
Cut leeks in half lengthwise and wash well to remove all sand, then slice.�
Peel and slice onions.� Cook in the butter until tender.� Add the chicken broth and potatoes; boil 20-30 minutes, until the potatoes are tender.� Press through a seive.� Srir in the cream; season to taste.�
Refrigerate several hours or overnight.� Serve ice cold garnished with chopped chives.�
Serves 4-6.��
