    Blueberry Latice Bars

    List of Ingredients


    • 1 cup margarine
    • 1/2 cup sugar
    • 1 egg
    • 2 3/4 cup flour
    • 1 tsp vanilla
    • FILLING
    • 3 cup fresh or frozen blueberries
    • 1 cup sugar
    • 3 tbsp cornstarch


    Instructions


    1. In bowl mix butter, sugar, add egg, mix well. Add flour, and vanilla.. Cover and put in fridge for 2 hours.

    2. In a pot bring the blueberries sugar, and cornstarch to a slow boil, Cook and stir for 2 minutes till thickened.

    3. Roll 2/3 of the dough in a rectangle 14 x 10.place in greased baking dish. Top with filling. Roll out rest of dough 1/4 inch thick. Cut into 1/2 inch wide strips. Make a latice crust over filling.

    4. Bake 375 oven 30 - 35 min or till top is golden brown. Cool on wire rack.



    Final Comments


    These bars are so good and you can use other fruit in them like raspberries.
    The crust is so good I often use it in other bars.
