    Sparkling Apricot Hot Pepper Jelly

    1/2 cup diced sweet red pepper
    1/2 cup diced jalapeno
    1/4 cup diced dried apricots -- soaked in water for a few hours
    3/4 cup white wine vinegar
    3 cups sugar
    1 pouch liquid pectin

    Dice peppers and apricots into a small, even dice. Combine peppers, drained apricots, vinegar and sugar in medium saucepan. Bring to a full boil over high heat and boil hard for one minute, stirring constantly. Add pectin; return to a boil and boil rapidly for one minute. Remove from heat. Allow to sit for a few minutes, stirring occasionally to evenly distribute peppers and apricots.

    Ladle into hot jars (sterilize if processing 5 minutes) and process in a boiling water bath 5 minutes at 0-1000 ft., 10 minutes at 1001-6000 ft. and 15 minutes above 6000 ft.
