Recipe Introduction
Just another one of those good, old Southern congealed salads. This one is very good, though. The mashed bananas add some �heft� to it, I think. Even Mr. Kim liked it and he is not a congealed salad guy!
List of Ingredients
Two 3 oz. pkgs. Strawberry Jell-O (I used the equivalent sugar-free)
1 c. boiling water
Two 10 oz. pkgs. Frozen strawberries
3 medium bananas, mashed
1 c. crushed canned pineapple, drained
1 c. chopped pecans
1 c. sour cream (I used reduced fat)
Recipe
Add the Jell-O mix to the boiling water and stir until dissolved. Add the strawberries, bananas, pineapple, and nuts. Pour half of the mixture into a 13X9� (slightly smaller would work better, I think) casserole; refrigerate until set. Cover with a layer of sour cream, then top with the remaining gelatin mixture. Refrigerate until firm; cut into squares to serve.
Serves 12.
