My version of a recipe from Gourmet Magazine, May 2001
Recipe Introduction
I made this very popular Guacamole for Jessica�s 22nd birthday party. Everyone loved it. It was very fresh tasting. You could certainly add some hotter chilies, if you like the heat. Try not to make this more than 1 hour ahead of time, because the avocado will turn brown.
List of Ingredients
2 ripe California avocados (1 lb total), quartered, pitted, and peeled
1/2 cup chopped fresh cilantro
1/2 cup minced white onion
1 can (4 oz.) mild green chilies
� c. chopped tomatoes
4 teaspoons fresh lime juice, or to taste
1 1/2 teaspoons kosher salt, or to taste
Recipe
Mash avocados in a bowl with a potato masher. Add lime juice and mix in. Add remaining ingredients and mix well. You can puree in a blender if you want a smoother consistency.
Makes about 2 cups.
