Every time I go visit my Grandma Jean I steal one of the magazines in her living room. They never change! There are some there from the 1990�s! This time I snagged one from 2004 � 12 years ago! I actually found a lot of recipes that I�d like to try. This is one of them. It worked very well and was extremely simple. The chicken breast came out surprisingly tender and moist.
List of Ingredients
1 lb. boneless skinless chicken breasts, cut into large chunks
3 garlic cloves, minced
1 T. olive oil
1/2 cup apricot preserves
1/4 cup barbecue sauce
1/4 cup water
2 tablespoons onion soup mix
Hot cooked rice
Recipe
Heat oven to 375 F.
Brown the chicken and garlic in a skillet in the oil until browned on all sides. Place in a greased 8x8-inch square baking pan.
Mix together the preserves, BBQ sauce, water and onion soup mix in a small bowl and pour over the chicken. Bake, uncovered, for 25-30 minutes until chicken is done. Serve with the hot rice.
Serves 4.
