Peanut Creole Soup

This was a very good soup. It was hard to figure out what was in it. Interesting and tasty!
List of Ingredients
2 Med. sized minced onions
1 small green pepper minced
1 Jalapeno pepper minced
1/4 cup minced sun-dried tomatoes (optional)
2 Tablespoons canola oil
2 Tablespoons flour
3 cups 1% milk
3/4 cup reduced fat peanut butter
3/4 teaspoon celery salt
Pepper, to taste
3 cups tomato juice
Recipe
In a 3 q. pan cook the onions and peppers in oil until soft and opaque. Add flour and stir a minute or two. Remove from heat.
In a separate bowl stir milk slowly into the peanut butter until smooth. Add celery salt, pepper and sun-dried tomatoes. Stir the milk mixture into the pan with the saut�ed onions and peppers. Return to medium heat and stir often until it thickens. Do not boil. Stir in tomato juice. Can be served hot or cold.
Serves 6.
