    Lulu's Eyeround Roast

    Lulu's Eye Round Roast

    1/2 c dry white wine
    2 tbsp olive oil
    2 tsp fresh snipped dill..or 1 tsp dried
    1/2 -1 tsp coarse ground black pepper
    1/4 tsp salt
    2 1/2-3# Eye of round roast, trimmed of visible fat
    2 med sweet onions, thinly sliced sweet onions, seperated into rings
    Dilled horseradish sauce (recipe follows)
    Combine wine, oil, dill, and s & p in a large ziploc bag. squeeze to
    mix. Add onions and beef and place in bowl, turning to coat.
    Marinate 24 hours, turning several times.
    Remove meat, reserving onions and marinade.
    Place roast in smallest possible pan and bake @ 350 for 1 1/2-2 hours. ( I do 1 1/2)
    Baste occasionally w/ marinade.
    When done, cook onions and marinade in saucepan , bring to a boil then
    cover and simmer 10-12 minutes while roast stands.
    Thinly slice the roast and serve topped w/ onions and dilled horseradish sauce.
    Dilled Horseradish Sauce:
    1/2 c mayo
    1/2 c sour cream
    1 tsp snipped fresh dill, or 1/2 tsp dried
    1 heaping Tbsp horseradish
    s & p to taste
    combine and chill.( I like to make this the night before when Im making the marinade.....tastes much better when prepared ahead of time.)
    This is such a yummy meal!!!! I always make it when those sweet onions
    are in season! (you can use reg onions too, just add a bit of sugar to marinade)
