    Cheesy Zucchini Chowder

    Recipe Introduction


    I got this recipe from a very good friend of mine.
    It is a very rich, and delicious soup.


    List of Ingredients


    • 4 Tbsp Butter
    • 1 medium onion chopped
    • 1/3 Cup flour
    • 1 tsp salt
    • 1/2 tsp pepper
    • 3 Cups Water
    • 3 ckn boulion cubes
    • 1 tsp each - parsley, oregano, basil
    • 1 - 12oz can evaporated milk
    • 4 medium potatoes peeled and chopped
    • 2 medium zucchini chopped
    • 1 - 10 oz pkg frozen corn
    • 1/4 tsp sugar
    • 1/4 cup parmesan cheese
    • 2 Cups shredded cheddar cheese


    Instructions


    1. In a large pot over med. heat melt butter. Add onions and cook til tender.

    2. Stir in flour to make a roux.

    3. Dissolve ckn cubes in water. Slowly add to the roux.

    4. Add the parsley, oregano & basil. Stir in the evaporated milk and potatoes. Bring to a boil, reduce heat, cover and simmer for 3 minutes.

    5. Add zucchini and simmer til tender.

    6. Add corn and sugar and simmer for 5 min longer.

    7. Just before serving stir in cheeses til melted.



    Final Comments


    You may garnish this with a little more of the
    fresh herbs if desired
    Makes a nice size pot of soup
    Serves 8 - 10
