    • 3/4 CUP FLOUR
    • 1 TSP. BAKING POWDER
    • 1 TSP. PUMPKIN SPICE
    • 2TSP. CINNAMON
    • 1/2 TSP SALT
    • 1/2 TSP.NUTMEG
    • 3 EGGS, SLIGHTLY BEATEN
    • 1 CUP SUGAR
    • 2/3 CUP CANNED PUMPKIN
    • 1 CUP CHOPPED WALNUTS (OPTIONAL)
    • FILLING:
    • 1 CUP POWDERED SUGAR
    • 1 8 OZ. CREAM CHEESE
    • 6 TBLSP. BUTTER
    • 1 TSP. VANILLA


    Instructions


    1. GREASE A 15X10X1" JELLY ROLL PAN. PREHEAT OVEN TO 375 DEGREES.

    2. MIX DRY INGREDIENTS IN A SEPERATE BOWL.

    3. BEAT EGGS AND SUGAR UNTIL FLUFFY. STIR IN PUMPKIN AND BLEND WELL.

    4. ADD DRY INGREADIENTS ALL AT ONCE.

    5. POUR INTO JELLY ROLL PAN AND EVEN OUT

    6. OPTIONAL STEP: SPRINKLE WITH WALNUTS

    7. BAKE 15 MIN. IN A 375 DEGREE OVEN.

    8. LOOSEN CAKE ON EDGES AND INVERT ONTO THE TOP DAMP DISHTOWEL SPRINKLED WITH POWDERED SUGAR.

    9. TRIM OFF EDGES IF NEED BE.

    10. ROLL UP IN TEA TOWEL AND COOL COMPLETELY.

    11. UNROLL CAKE. SPREAD WITH CREAM CHEESE FILLING AND REROLL.

    12. COVER WITH WAXED PAPER AND REFRIGERATE OVERNIGHT.

    13. SLICE INTO 1 INCH SLICES. DUST WITH POWDERED SUGAR IF DESIRED.

    14. MAKES 1 PUMPKIN ROLL
