    1/2 cup (1 stick) butter
    1 cup apple butter
    1 egg, beaten
    1 tsp vanilla extract
    1 1/2 cups all purpose flour
    1 tsp baking soda
    1 tsp ground coriander
    1/2 tsp salt
    1/2 cup raisins

    Streusel:
    1/3 cup (2/3 stick)butter, softened
    1/3 cup granulated sugar
    1/3 cup dark brown sugar
    1/3 cup all purpose flour
    1 tsp ground coriander
    3/4 cup chopped walnuts or pecans

    Whipped cream

    Preheat the oven to 350 degrees

    In a large saucepan, melt the butter over low heat. Remove from the heat; stir in the apple butter, egg, and vanilla. Combine the dry ingredients and gradually beat them into the egg mixture. Stir in the raisins. Pour the batter into a greased and floured 9x9" pan.

    Place the streusel ingredients in a bowl and cut together until thoroughly combined. Sprinkle the streusel over the top of the batter. Bake for 40 to 45 min or until the top springs back when lightly touched.

    Serve with whipped cream.

    Serves 9 to 12
