    Recipe Introduction

    Here's on of my mom's favorites. Its a mexican twist to chicken cacciatorre. This is real easy, vary the amounts to the size of your family.

    List of Ingredients

    2 cups cooked rice (can cook while making chicken dish)
    2-3 cups Cooked chicken, shredded
    1 tablespoon oil
    1/2 cup diced onion
    1 cup chopped whole peeled tomatoes
    2 cloves garlic, minced
    1/2 teaspoon cumin
    1 cup water or broth
    salt and pepper to taste

    Recipe

    In a large pot boil chicken until cooked, let cool and shred. save broth.

    In a large frying pan, 2-3 inch deep, place oil in pan. Saute onion and garlic. Add tomatoes, chicken and cumin. Add water or broth. add salt and pepper to taste. Let simmer 20 minutes.

    Serve over hot rice. Serve with salsa and tortillas.
