List of Ingredients
2 C Diced Tomatoes
1/2 C Diced Peeled Jicama
1/2 C Diced Onion
1/2 C Diced Radishes
1/3 C Chopped, Seeded, Peeled Cucumber
1/4 C Orange Juice
2 Tbsp Chopped Fresh Mint
2 Tbsp Chopped Fresh Parsley Or Cilantro
2 Tbsp Fresh Lime Juice
2 Tsp Chopped And Seeded Jalapeno
1/2 Tsp Salt
Recipe
Combine all the ingredients in a large bowl, and toss gently. Cover the salsa, and chill.
NOTES: A bowl sitting next to your cutting board comes in handy as you finish chopping and dicing the ingredients for this citrus-hot Mexican-style salsa. It's delicious served with tortilla chips or as a topping for Quesadillas.
