1 425g/15oz can Creamy Pumpkin Soup
2 Tblsp chopped fresh basil -OR- 1 tsp dried
1/4 cup white wine
1/4 cup cream
4 cups dried spiral pasta
1/2 cup roasted pine nuts
4 slices bacon, cooked crisp & crumbled
1/2 cup grated Parmesan cheese
sprigs basil (optional)
Recipe
Pumpkin and Sweet Basil Sauce:
1. In a saucepan simmer together the Pumpkin Soup with the basil and wine until hot. Stir in the cream just before serving over the spiral pasta.
2. Cook the pasta in boiling salted water until al dente. Drain well.
3. Toss in the Pumpkin and Basil Sauce.
4. Serve in large wide bowls, garnished with the pine nuts, crumbled bacon, Parmesan cheese & basil if desired.
