    Rice Sand Castles

    List of Ingredients

    3� cups cooked rice
    3/4 cups frozen peas
    3/4 cups frozen corn
    4 ounces Velveeta or similar process cheese product, cubed
    1/4 tsp pepper


    Recipe

    In a microwave-safe bowl, combine all ingredients; mix well. Cover and microwave on high for 2-3 minutes or until heated through and cheese is melted, stirring twice. To make sand castles, pack rice mixture into 1/2 cup and 1/4 cup measures; unmold and stack on dinner plates to look like sand castles.

    The magazine showed a picture of these decorated with minature colorful flags, but I couldn't find any of those at our party store, so I bought some real cute colorful frou frou drink stirrers to use to stick in my rice castle to make it look more festive.
