Spaghetti with Rubies (beets)

This simple dish is simply delicious - a good side dish with schnitzel or a breaded chicken pattie.

2 cloves minced garlic
pinch crushed red pepper
olive oil as needed
salt to taste
2-3 cups beets, cooked, peeled & diced
spaghetti or linguini, cooked
Recipe
Saut� garlic and red pepper in olive oil until sizzling and fragrant. Add beets and toss until coated. Add pasta and some of the cooking water; toss until coated and simmer until evenly colored, stirring constantly - about 2 minutes.
Serve immediately.
