    Turkey Asparagus Roll-ups

    List of Ingredients




    4 turkey breast fillets
    2 tsp. Dijon mustard
    12 to 16 spears fresh asparagus, cleaned & trimmed
    1/2 cup grated mozzarella cheese
    2 tbsp. minced parsley
    2 tbsp. minced shallots
    seasoned salt as needed
    ground pepper as needed
    1 tbsp. vegetable oil
    1/4 cup dry white wine
    cooked rice or pasta of choice

    Gently pound turkey fillets to the length of the asparagus spears. Spread each fillet with 1/2 tsp. mustard. Place three or four asparagus spears at one end of fillet; sprinkle each with 2 tbsp. grated cheese, 1� tsp. each of parsley & shallots, followed by seasoned salt & pepper to taste.

    Roll up turkey to enclose contents and fasten with skewers or toothpicks. Brown turkey rolls in oil in an oven-proof skillet or pan. Pour wine over rolls and sprinkle lightly with more seasoned salt & pepper.

    Bake at 350 degrees for 15 to 20 minutes or until turkey is cooked but not dry. If desired, add 2 tablespoons of water to pan drippings, heat and serve over turkey rolls.

    Serve over hot rice or pasta.
