    Chickpea chili burritos

    List of Ingredients

    Slurry:
    1 pound tomatillos, husks removed & washed & quartered
    1/2 - 1 onion, cut into chunks (very depending on if you like onion or not)
    3-4 cloves of garlic, peeled
    Few dashes of red pepper
    Few dashes of black pepper
    Glug of olive oil
    1 1/2 T lime juice
    Generous handful of fresh cilantro
    ~ 1/2 c. water

    2-3 cans chickpeas
    brown rice
    pepper jack cheese
    tortillas

    Recipe


    Combine ingredients for slurry in a blender or food processer.

    In a large pot combine the green slurry with 2-3 cans of chickpeas. Simmer until it is thickened up and cooked down to appear chili like, stirring occasionally. Make into burritos with brown rice and pepper jack cheese.

    You can add cut up raw chicken breast during the cooking process if desired.
