8 boneless chicken thighs
1/4 cup honey
1 med. onion, chopped
2 cloves garlic, minced
3 cinnamon sticks
Fresh lemon juice
1-1/2 cup chopped, dried apricots
Recipe
1. Arrange chicken thighs in a 2-quart shallow baking dish. Pour honey over the chicken, then sprinkle with onion and garlic. Add the cinnamon sticks, drizzle with lemon juice and top with apricots.
2. Bake in a 350� F oven for about 45 minutes, or until the chicken is tender. Remove the cinnamon sticks before serving.
