    LEMON-SAUCED PUDDING

    Recipe Introduction


    Mix dry ingredients. Cut in shortening. Add wet ingredients. Spread batter into an 8� square pan. Combine sugar, water, lemon juice and rind. And pour carefully over the top of the batter. Do not stir. Bake at 350 degrees for 40-45 minutes. Spoon into serving dishes, cake side down. Serve with whipped cream, if desired.

    • Cake batter:
    • 1-1/2 cups all-purpose flour
    • 3/4 cup sugar
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 cup shortening
    • 3/4 cup milk
    • 1 egg
    • Lemon Sauce:
    • 1 cup sugar
    • 1 cup boiling water
    • 1/3 cup lemon juice
    • 2 teaspoons grated lemon rind
