Surprise Muffins

List of Ingredients
1 egg
3/4 cup milk
1/2 cup vegetable oil
1/3 cup jam
2 cup all purpse SIFTED flour
1/3 cup sugar
3 tsp. baking powder
1 tsp. saltRecipe
Day 1:Sift flour and measure the 4 dry ingredients into a bowl.
Cover the bowl and store for the next day.
Day 2:Preheat oven to 400 degrees
Put 12 paper cupcake holders into a muffin tin.
Using a hand beater, beat egg then beat in milk and oil
GRADUALLY add the dry ingredients and stir with spoon until the flour is moistened. The batter should be lumpy.
Fill the cupckae holders 1/3 full, add 1 tsp. jam, and fill another 1/3. The batter should fill the paper holders 2/3 full.
Bake in the center of oven approximately 20 minutes or until golden brown.
