    Evergreen Commons Chicken Marengo
    Serves 4

    4 4-oz. boneless, skinless chicken breasts
    2 green peppers, cut in strips
    2 medium onions, cut in strips
    1 cup sliced mushrooms
    2 small tomatoes, diced
    1 28-oz. can diced tomatoes in juice
    2 cloves garlic
    2 teaspoons olive oil
    2 tablespoons white wine
    1/2 cup sliced black olives
    2 tablespoons parsley

    Lightly sear chicken breast in pan on stove --transfer to baking
    dish. Top with peppers, onions, mushrooms and fresh tomatoes.
    Partially drain canned tomatoes and puree in blender with olive oil,
    wine, and garlic. Pour mixture over chicken, cover and bake until
    chicken is done, approximately 45-60 minutes. Finish with parsley and
    black olives.
