    2 lbs potatoes

    1 onion

    1 TB oil of your choice

    1 lb spinach (fresh or frozen)

    1 1/2 cups low fat milk

    2 teaspoons cornstarch

    1 egg

    salt, pepper and nutmeg (if you like it, you can leave it out too)

    1 cup of shredded cheese

    Cook the potatoes in their peel for about 20 min so they are halfway done. Peel the onion and chop finely, brown them slightly in the oil. Add the spinach (if you use frozen spinach cook until it's not frozen anymore at low to medium temperature), season with salt and pepper. Make sure that the spinach is drained properly. If it's very liquidy, squeeze it in several layers of paper towels before continuing with recipe.

    In the meantime, peel the potatoes and cut them in slices. Carefully mix the spinach with the potatoes (that's what the recipe says) OR make layers in a casserole (that's what I do) like with a lasagna, potatoes - spinach - potatoes - spinach.

    Add cornstarch to milk and mix well so you don't get lumps, season with salt, pepper and nutmeg. Add the egg and mix well. Pour over spinach potato mixture. Put the cheese on top of everything and put it in the oven at 400 for about 35 min.
