Celebration Antipasto - e
Plan ahead�needs to chill for at least 3 hours.

Serves: 16
1 medium cucumber, sliced
1 medium zucchini, julienned
1 medium carrot, julienned
1 medium red onion, sliced
1 c. fresh broccoli florets
1 c. fresh cauliflowerets
Optional: 1 2-1/4-oz. can sliced ripe olives, drained
1/2 c. olive oil
1/4 c. white wine vinegar
1 tsp. dried oregano
1/2 tsp. ground mustard
1/4 tsp. garlic powder
1/8 tsp. pepper
1/8 tsp. celery salt
In a bowl combine the vegetables and olives, if desired. In a small bowl, whisk olive, vinegar and seasonings. Pour over vegetables and toss. Chill for 3 hours. Serve in a lettuce lined bowl with a slotted spoon.
