Christmas Rice Pudding
Serves: 8
1-3/4 c. uncooked long grain rice
2 c. water
4 c. skim milk
1-1/2 c. sugar
2 T. margarine
In a saucepan, combine the rice and water, simmer for 10 minutes. Add milk and bring to a boil. Reduce heat and simmer, uncovered, for 60-70 minutes or until rice is tender. Add sugar and margarine; mix well. Spoon into small bowls or dessert dishes.
One 3/4-cup serving equals: 375 calories�3 gm fat (1 gm saturated)�2 mg cholesterol�89 mg sodium�79 gm carbohydrate�8 gm protein.
