Herb & Sausage Dressing -- w
Serves 8
8 cups bread in 1/2-inch cubes
1/2 pound good-quality pork sausage
1 small onion, finely diced
2 stalks celery, thinly sliced
1 tart green apple, peeled, cored and chopped
1/2 cup walnuts, chopped
1 tablespoon fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons fresh sage, chopped
1/4 cup Italian parsley, chopped
2 eggs
About 1 cup turkey broth or chicken stock
Salt and pepper
Preheat oven to 350 degrees. Butter a deep 9-by-13-inch baking pan. Place bread cubes in large bowl and set aside.
In non-stick pan, brown sausage, breaking it up into small chunks. Remove sausage with slotted spoon and add it to bowl with bread. Reserve about 2 tablespoons fat and discard rest. Add onion and celery to pan and saute on medium heat until translucent, 3-5 minutes. Add apple and cook 2-3 minutes more. Add walnuts and cook 1 minute.
Remove pan from heat. Mix in herbs. Add mixture to bread cubes and toss. Beat eggs with 1/2 cup broth and stir into bread cubes. Add remaining broth and toss well, adding more broth if necessary to moisten bread evenly. Season with salt and pepper. Taste and adjust seasoning if necessary.
Turn stuffing into buttered pan and bake 45 minutes-1 hour, until golden brown and crusty on top.
