    Maple-Glazed Sweet Potatoes -- e-w
    Serves: 8

    1/4 c. pure maple syrup � or � maple flavored syrup
    3 T. coarse grain Dijon-style mustard
    2 T. cooking oil
    1/2 tsp. pepper
    1/8 tsp. salt

    2 lb. sweet potatoes (4 to 5 medium). Peeled and cut into 1 to 1-1/2-in. chunks
    1/2 c. fresh cranberries

    Preheat oven to 400�. In a large bowl, combine the first 5 ingredients. Add sweet potatoes and cranberries; toss to coat. Transfer to a 3 qt. shallow baking dish, spreading evenly.

    Bake for 30-35 minutes or until sweet potato is tender and glazed, stirring twice.
