Pork Tenderloin w/Raspberry Sauce Supreme
Serves: 4
1 pork tenderloin (1 lb.) trimmed and cut into 8 pieces
1/8 tsp. cayenne pepper
6 T. red raspberry preserves
2 T. red wine vinegar
1 T. ketchup
1/2 tsp. prepared horseradish
1/2 tsp. soy sauce
1 garlic clove, minced
2 kiwifruit, peeled and thinly sliced
Fresh Raspberries
Flatten each tenderloin slice to 1-in. thickness; lightly sprinkle both sides with cayenne pepper. In a large heavy skillet, coated with nonstick cooking spray, cook tenderloin over medium-high heat for 3-4 minutes on each side.
Meanwhile is a small saucepan, combine the next 6 ingredients; simmer for 3 minutes, stirring occasionally. Keep warm.
Place tenderloin on a warm serving plate; top with sauce. Garnish with Kiwifruit and raspberries.
