    Shallot-Mushroom Gravy -- e-w

    Serves: 10

    Nonstick cooking spray
    1 c. coarsely chopped shallot
    1-1/2 c. sliced assorted fresh mushrooms (such as oyster, shiitake, cremini and button)
    1 14-oz can reduced-sodium chicken broth, �divided�
    1/4 c. flour
    1 T. balsamic vinegar
    1 tsp. snipped fresh oregano or marjoram � or � 1/4 tsp. dried oregano or marjoram, crushed
    Dash ground black pepper

    Coat medium saucepan with cooking spray; heat over medium-high heat. Add shallot; cook and stir about 6 minutes or until tender and golden. Add mushrooms; cook for 4 minutes.

    In a small bowl combine 1/2-cup of broth and flour until smooth. Add to mushroom mixture. Add remaining broth and remaining dried herbs, if using. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Stir in fresh herbs if using.
