    Mount Fuji Trail Mix

    Makes about 8 cups.

    4 cups crispy rise or corn cereal
    3 cups Asian rice crackers
    1 1/2 cups dried peas
    1 cup chopped walnuts (optional)
    1/2 cup honey or rice syrup... (*See footnote 1)
    1/4 cup vegetable oil
    2 tablespoons margarine
    2 tablespoons soy sauce
    2 tablespoons brown sugar
    1/2 cup crumbled, dried Nori... (*See footnote 2)
    2 tablespoons black sesame seeds

    Preheat oven to 250 degrees. In a large roasting pan or baking dish, mix cereal, crackers, peas and walnuts.

    In medium saucepan, combine honey or rice syrup, oil, margarine, soy sauce and sugar. Cook over medium heat, stirring, until margarine melts and mixture is thoroughly heated, about 5 minutes.

    Pour mixture over dry ingredients in pan; toss to mix. Bake until mixture is crisp, stirring every 15 minutes, about 1 hour. Add nori and sesame seeds during last 15 minutes of baking time.

    Footnote #1: Rice syrup: Thick syrup made from rice and barley. Also called rice malt. Used as a sugar substitute in sweets and desserts......

    Footnote #2: Nori (NOH-ree): Paper-thin, crispy sheets of pressed sea vegetable. Usually used for Japanese sushi rolled around rice or crumbled as a garnish. Rich in protein, calcium, vitamins, iron and minerals.
