Apple and Grits Brunch Casserole

Yields 8 servings.
2/3 cup uncooked quick grits
2 2/3 cups water
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup (4 ounces) shredded medium Cheddar cheese
1 cup (4 ounces) chopped American cheese
2 tablespoons margarine
1/4 cup finely chopped onion
1 garlic clove, minced
1 can (4.5 ounces) chopped green chilies
2 cups diced, peeled Michigan apples
Egg substitute equivalent to 2 eggs
Cook grits with water and salt according to the package directions, adding pepper. When cooked, add cheese, stirring until completely melted. Remove from heat and stir in margarine, onion, garlic, chilies and apples. Quickly stir eggs into warm mixture. Pour mixture into a shallow 2-quart casserole dish coated with vegetable cooking spray.
Bake at 350 degrees about 50 minutes or until set and golden brown. Cool 10 minutes before serving. Serve hot as a brunch side dish.
