    Mushroom Quesadillas -- w

    Mushroom Quesadillas -- w
    Serves: 4 (3 pieces per serving)

    1 3-1/4 oz. can of sliced mushrooms
    1/2 c. reduced fat cream of mushroom soup
    2 T. chopped canned green chilies, rinsed and drained
    Vegetable oil spray
    4 6-inch corn tortillas
    3/4 to1 c. grated reduced-fat jalapeno Jack � or � Monterey Jack cheese
    1/4 c. spicy salsa

    In a medium saucepan, combine mushrooms, soup and chilies. Coogk over medium heat for 2 minutes, or until heated through, stirring occasionally.

    Meanwhile, heat a griddle or large skillet over medium-high heat. Remove it from heat and spray with vegetable oil spray. Warm 1 tortilla for about 1 minute on each side, or until it softens. Repeat with remaining tortillas.

    To Assemble:
    Place warm tortilla on a microwave-safe tray. Spread filling on one half of each tortilla, leaving 1/2-inch around edge. Sprinkle cheese over filling. Fold each tortilla in hald over filling. Press edges together.

    Microwave on HIGH for 1 minute. To serve, cut each tortilla into 3pieces. Put a dab of salsa on each piece.

    One 3 piece serving equals: 186 calories�11 gm protein�22 gm carbohydrate�18 mg cholesterol�6 gm fat (3 gm saturated)�4 gm fiber�375 mg sodium +++WWP: 3
