    Spicy Vegetable Quesadillas --e-w

    Serves 8

    1 small zucchini, chopped
    1/2 c. chopped green bell pepper
    1/2 c. chopped onion
    2 cloves garlic, minced
    1/2 tsp. chili powder
    1/2 tsp. ground cumin
    8 (6-in.) flour tortillas
    1 c. (4 oz.) shredded reduced-fat Cheddar cheese
    1/4 c. chopped fresh cilantro

    Spray large nonstick skillet with cooking spray. Heat until hot. Add first 6 ingredients; stir 3-4 minutes or until vegetables are crisp-tender. Remove vegetables and wipe skillet clean.

    Spoon 1/8 vegetable mixture evenly over half of each tortilla. Sprinkle with cheese and cilantro. Fold each tortilla in half.

    Spray same skillet with cooking spray. Add tortillas and heat 1-2 minutes per side over medium heat or until lightly browned. To serve cut into thirds.
