ONE POTATO-TWO POTATO PANCAKES

Lower your sarurated fat...use margarine rather than butter.
Exchanges
Yield: 10 (4-inch) pancakes.
1 cup mashed potatoes -- hot
2 tablespoons butter or margarine
2 large eggs -- lightly beaten
3 small potatoes -- peeled and shredded
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon caraway seeds
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup milk
3 tablespoons butter or margarine
Combine mashed potatoes, and 2 tablespoons butter, stirring until butter melts. Stir in eggs and next 6 ingredients; add milk, stirring until blended.
Melt 1 tablespoon butter in a large nonstick skillet over medium heat; drop potato mixture into skillet, 2-1/2 tablespoonfuls at a time;flatten slightly.
Cook 3 to 4 minutes on each side or until golden, adding
remaining 2 tablespoons butter as needed. Drain on paper towels; serve immediately.
