    Pesto Roasted Potatoes -- e-w

    Pesto Roasted Potatoes
    Serves: 6

    2 lbs. small red potatoes, washed and quartered
    1/2 c. pesto sauce
    1/2 tsp. pepper

    Coat rimmed baking sheet with nonstick cooking spray. In medium bowl combine all ingredients; toss to coat evenly. Place on baking sheet. Bake at 425-F for 50-60 minutes or until fork tender. Serve immediately.
