    Roast Cajun Potatoes -- e-w

    Roast Cajun Potatoes
    Serves: 4 (about 16 wedges)

    1 lb. baking potatoes (about 2 medium)
    2 T. finely chopped fresh parsley
    2 T. canola oil
    1/2 tsp. garlic powder
    1/2 tsp. onion powder
    1/2 tsp. ground red pepper
    1/2 tsp. dried thyme leaves
    1/4 tsp. black pepper

    Preheat oven to 400�. Peel potatoes. Cut each potato lengthwise into 8 wedges. Place on ungreased jelly-roll pan (15x10x1-in.). Toss potatoes with the remaining ingredients, until evenly coated. Bake 50 minutes, turning wedges halfway through cooking time. Serve immediately.

    One 4-wedge serving equals: 120 calories�2 gm fat ( trace saturated)�2 gm protein�23 gm carbohydrate�2 gm fiber�0 mg cholesterol�7 mg sodium +++EXC: 1-1/2 starch�1/2 fat +++WWP:2
