Sage Mashed Potatoes

4 medium potatoes, peeled and cut into 1/8-in. slices
1 medium onion, chopped
1/4 c. water
2 T. olive�or�canola oil
1 T. minced fresh sage�or�1 tsp. rubbed sage
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. reduced-fat plain yogurt
In a greased 11-in. x 7-in. x 2-in. baking dish, layer potatoes and onions. Combine the next 5 ingredients; pour over potato mixture. Cover and bake at 450� for 45-50 minutes or until potatoes are tender; stirring twice. Transfer to a mixing bowl; add yogurt and mash.
