    GREEN BEAN SOUP

    1 qt. water
    2 c. fresh green beans, cut into 2-in. pieces
    1-1/2 c. cubed peeled potatoes
    1 c. cubed fully cooked low-fat ham
    1/2 c. thinly sliced carrot
    1 medium onion, diced
    1 bay leaf
    1 sprig fresh parsley
    1 sprig fresh savory OR 1/4 tsp. dried savory
    1 low-sodium beef bouillon cube
    1/4 tsp. pepper

    In a 2-qt. saucepan, combine all ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender. Before serving: remove bay leaf, parsley and savory sprigs.

    One 1-cup serving equals: 107 calories�175 mg sodium�19 mg cholesterol�12 gm carbohydrate�9 gm protein�2 gm fat ++++ Exchanges: 1 lean meat�1 vegetable�1/2 starch
