    4-1/2 c. low-sodium chicken broth

    2 cans (15 oz. each) black beans, rinsed and drained
    1/2 c. EACH chopped green, yellow and red sweet pepper
    1/4 c. chopped onion
    1 T. chili powder
    1-1/2 tsp. paprika
    1 to 1-1/2 tsp. pepper
    1 to 1-1/2 tsp. crushed red pepper flakes
    1 to 1-1/2 tsp. ground cumin
    Dash cayenne pepper

    2 c. cubed cooked chicken breast
    Shredded cheddar cheese, optional

    In a 3-qt. saucepan, bring broth to a boil. Reduce heat; add beans, peppers, onions and seasonings. Cover and simmer 15 minutes. Add chicken; simmer for 30 minutes. Garnish with cheese if desired.
