    Mushroom-Barley Chowder

    Serves: 4

    3 c. sliced fresh mushrooms (8 oz.)
    1 can (14-1/2 oz.) reduced-fat, reduced-sodium chicken �or�vegetable broth
    8 green onions, sliced (1/2 c.)
    1/2 c. quick cooking barley
    1/2 tsp. dried basil, crushed
    1/8 tsp. pepper
    1 can (16-1/2 oz.) reduced-sodium cream-style corn
    1 can (12 oz.) evaporated skim milk

    In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; cover and simmer about 10 minutes or until barley is tender. Stir in corn and milk. Cook and stir until heated through.

    One serving equals: 362 calories�2 gm fat () saturated)�4 gm cholesterol�302 mg sodium�75 gm carbohydrate�3 gm fiber�16 gm protein ++++ WWP: 7.6
