    Sweet Potato Pancakes -- e-w

    Sweet Potato Pancakes -- e-w
    Serves: 5

    1 lb. sweet potatoes, peeled and shredded
    2 green onions, chopped
    1 egg, lightly beaten
    1 egg white, lightly beaten
    1/4 c. flour
    1/2 tsp. salt
    1/2 tsp. pepper

    5 T. reduced-fat sour cream

    Optional: Finely chopped sweet red pepper and sliced green onions

    In a bowl, combine the first 7 ingredients; mix well.

    Drop batter by 1/4 cupfuls onto baking sheets coated with nonstick cooking spray; flatten slightly. Bake at 400� for 8 minutes; turn pancakes over. Bake 8-10 minutes longer or until potatoes are tender and pancakes are golden brown. Top with sour cream; garnish red pepper and onions, if desired.
