    Sweet Potatoes w/ Lemon -- e-w
    Makes: 4 Sweet Potatoes (4 Servings)

    - 4 small to medium sweet potatoes (1-1/4 pounds total)
    - 1 tablespoon plus 1 teaspoon margarine
    - 2 tablespoons fresh lemon juice
    - 1 teaspoon grated lemon zest
    - 1/4 teaspoon salt
    - 1/8 teaspoon nutmeg, preferably freshly grated

    Preheat the oven to 375 degrees F. Scrub the potatoes, pierce them with the tip of a sharp knife in several places, and place them in the oven. Bake until the potatoes are tender, about 50 minutes.

    Slit the tops of the potatoes lengthwise with a knife. Press the ends to open the slits. Top each potato with 1 teaspoon margarine. Sprinkle each with lemon juice, zest, salt, and nutmeg. Serve immediately while hot.
