    Glazed and Confused Carrots

    Makes 4 servings.

    1 lb. baby carrots
    3 tbsp. peach jam
    1 tsp. grated orange zest
    1 tsp. Dijon mustard
    1/4 tsp. ground thyme

    Steam or boil carrots until tender, about 15 minutes. While carrots are cooking, prepare glaze. Combine jam, orange zest, mustard, and thyme in a small saucepan. Cook over medium heat until bubbly, about 2 minutes.
    Toss cooked carrots with glaze and serve immediately.

    Per serving: 76 calories, 1.1 g fat, 17.1 g carbohydrate, 1 g protein, 74 mg sodium, 0 mg cholesterol
