    Jimmy's Pumpkin Cheesecake

    List of Ingredients


    • 8 oz. Gingersnaps finely crushed
    • 3 T. melted butter
    • 2 T. Sugar
    • 2 pkgs. 8 oz. cream cheese (light ok) softened
    • 3/4 cup brown sugar packed
    • 3 Lg. eggs
    • 2 tsp. pure vanilla extract
    • 1 15 oz. canned pumpkin
    • 1 T. flour
    • 2 tsp. pumpkin pie spice
    • Garnish: Whipped Cream and pecans sliced


    Instructions


    1. Mix:
    2. Combine crumbs w/butter and sugar.
    3. Press into the bottom of a 9" spring form pan.
    4. Bake 15 minutes and set aside.
    5. Beat cream cheese and brown sugar till smooth.
    6. Add eggs on at a time.
    7. Add remaining ingredients and beat until smooth.
    8. Pour into the prebaked pan.
    9. Bake 50 minutes or until the filling barely moves
    10. (like stiff jello)
    11. Cool then chill for several hours or overnight in
    12. the refrigerator. Garnish and serve.
