    1 package (about 1 pound) PERDUE� FIT 'N EASY� Fresh Skinless and Boneless Chicken Breasts
    1/2 cup flour
    1/2 teaspoon ground thyme
    Salt and ground pepper to taste
    2 tablespoons canola oil
    1/4 cup minced shallots or scallions
    1/2 cup sweetened dried cranberries
    1/2 cup white or red balsamic vinegar
    1 tablespoon butter or margarine
    1 tablespoon minced fresh parsley, optional

    Recipe





    In shallow bowl, combine flour, thyme, salt and pepper.
    Flour chicken, shaking off any excess.
    In a large nonstick skillet, over medium-high heat, heat oil.
    Add chicken, reduce heat to medium, and cook 6 to 8 minutes per side until golden brown and cooked through.
    Remove chicken to warm platter.
    Add shallots and cranberries to skillet; saut� 1 minute.
    Add balsamic vinegar and cook stirring for 1 minute, until vinegar has reduced to about 1/4 cup. Off heat, swirl in butter.
    Spoon sauce over chicken, and sprinkle with parsley. Ready In: 15 minutes
    Servings: Makes 4 servings
