    2 c. sugar
    5 T. flour
    5 T. cocoa
    pinch salt
    5 eggs, separated
    4 c. milk
    1/2 stick margarine
    1 1/2 tsp. vanilla
    2 baked pie shells

    Recipe



    In a saucepan, combine sugar, flour, cocoa, salt, egg yolks, milk, margarine and flavoring. Cook over med. heat; stirring constantly until thickened - about 5 min. Pour into baked pie shells. Add meringue (recipe below) and place in 350 deg. oven until lightly browned.

    Perfect Meringue:

    5 egg whites
    1 T. plus 2 heaping tsp. cornstarch
    2 tsp. cold water
    5 T. sugar
    1/2 c. boiling water


    In a small saucepan, moisten 1 T. of cornstarch in cold water; stir in boiling water. Cook over low heat; stirring constantly until liquid is clear. Set aside. Combine remaining cornstarch and sugar. In a large mixing bowl, beat egg whites, gradually adding sugar mixture until stiff peaks form. Slowly, fold in clear liquid. Spread over chocolate pie and lightly brown.
