    No Fail Lemon Pie

    List of Ingredients



    1 baked pieshell

    Cooked Filling:
    1 1/4 cup sugar
    3 egg yolks
    1 1/2 tsp. lemon rind
    6 Tbl. cornstarch
    2 cups water
    3 Tbl. butter
    1/3 cup Lemon juice

    Recipe


    Mix all ingredients together and place filling in shell.
    Cook 1 Tbl. of cornstarch with 3 Tbl. water until clear and set aside until meringue is ready.
    Meringue:
    3 egg whites stiffly beaten, add 6 Tbl.'s of sugar and a pinch of salt and 1 Tbl. vanilla. Add cornstarch mixture to egg whites. Put on pie and bake until nicely brown at 375 degrees for 12 to 15 min. Meringue cuts nice and not sticky.
