    When I waited tables at Chi Chi's we use to make our own SUPER nachos after work. These were the best pumped up version and I still make them!


    List of Ingredients


    • 1/2 lb flank steak
    • 1 can refried beans
    • 3 avocados
    • 1/4 cup store bought salsa
    • 1 small can sliced jaapeno peppers
    • Sour cream
    • Grated Cheddar Cheese
    • Tortilla Chips


    Instructions


    1. Sear the flank steak nder the broiler until done to taste.
    2. While the steak is cooking, heat up the can of beans on the stove.
    3. Mix a guacamole by mashing the meat of the avocado with 1/4 cup store bought salsa. (can be done by hand or in the food processor)
    4. When the steak is ready, chop it into bite size pieces.
    5. Place on a cookie sheet, restaurant style tortilla chips. Line them up as not to overlap.
    6. On each chip spread a thin layer of warm refried beans, once piece of steak, and one jalapeno slice. Cover each chip with a nice handful of shredded cheese.
    7. Place under the broiler until the cheese is melted. Do not over cook - just until all the cheese is melted.
    8. Remove and give each chip a spoonful of guacamole and sour cream.
    9. Place on serving plate and serve right away!


    Final Comments


    These are really filling - but they go quickly!
