    Deli Roast Beef

    List of Ingredients


    • 1 boneless rump roast
    • vegetable oil as needed
    • salt
    • pepper
    • cajun seasoning (optional)


    Instructions


    1. Rub roast with oil and rub in the seasonings.

    2. Place roast in preheated 500� oven and roast for 10 minutes.

    3. Reduce heat to 350�, and cook 20 minutes per pound if well marbled; 15 minutes per pound if it's a lean roast. This should result in nice tender rare roast beef.

      Slightly increase cooking time for a more well-done roast, but be careful you don't sacrifice tenderness.

    4. Let stand 10 minutes before slicing very thin.



    Final Comments


    Italian dressing or a dry rub may be substituted for oil & seasonings.
