    Level 1 ~ Pro/Fat ~ This really couldn't be easier and we love to eat Italian Sausage this way!

    List of Ingredients




    6 Italian Sausage links
    1 (14 ounce) can tomato sauce
    1 - 2 teaspoons Italian Seasoning (to taste)
    1 sweet onion, sliced
    1/2 - 1 sweet red pepper, sliced * (see note)

    I always double this recipe, as it keeps well both in the refrigerator for lunch leftovers and in the freezer.

    Brown Italian Sausage (I add a bit of olive oil) until done. Remove from pan.

    In the same pan with drippings - saute your sliced sweet onion for 5-10 minutes. Don't thoroughly cook them, as they'll continue to cook when you add the sauce. If you're using a fresh red pepper, saute it with the onion.

    * Note on red pepper ~ Personally, I love sweet peppers in dishes like this, but I do not like the skin. I buy jars of 'roasted red peppers'. These have been fire roasted and the skins have been removed. We love these. I always keep 3-4 jars on hand. If you only use a few of the peppers in the jar, I leave in the liquid and simply recap the jar (liquid & remaining peppers inside) and put it in the freezer. They freeze very well for next time.

    Add Italian Sausage back into pan with the peppers and onions (if using jarred peppers, add them now - do not saute these with the onions). Pour in tomato sauce and add Italian Seasoning to taste.

    Bring to a boil, stirring well and reduce heat to simmer. I like to simmer this for 1-2 hours. Keep an eye on the sauce and if it starts getting too thick, simply add water - you really can't go wrong.

    Serve with a nice salad and some "Garlic Toast" (recipe in the 'Miscellaneous' category - it's fried mozzarella sticks) and you've got a nice meal.
